Hand wash sinks supplied with liquid soap and paper towel in dispensers. Hot holding units for meat >60C. Freezers <-18C. Fridges <4C. Coolers for drinks and whip cream and cheese curds <4C. Sanitizer Quat >200ppm (300ppm). 3 compartment sink for dishwashing with Quat sanitizer, not filled at the time of inspection. Clean in place equipment: slicers are in good repair and appear to be clean. Floors are not greasy in the back kitchen area, great job. Back dry storage and loading area could use a general sweep and check under racks and equipment. All other equipment in good working condition and appear to have clean surfaces. No signs of pests at the time of inspection. Door sweep may need replacement soon, some small light showing through, please monitor and repair as necessary.
