Observation (CORRECTED DURING INSPECTION): Staff member wearing gloves was observed handling raw marinated chicken directly with gloved hands, then rinsing gloved hands with water only, then proceding to touch the paper towel roll (a wet hand print observed on the paper towel roll), the knobs of the stove, and a utensil with the same gloves.
Corrective Action(s): Paper towel discarded, affected areas/equipment/utensils sanitized. Staff member discarded gloves and washed hands using warm running water and liquid soap, then dried hands with a paper towel before putting on a new pair of gloves.
This is a repeat violation.

Observation (CORRECTED DURING INSPECTION): In the walk in cooler, a plastic basket of raw marinated chicken (portioned into bags) was observed sitting atop a metal tray located above a box of carrots.
Corrective Action(s): Carrot box relocated to vegetable area. Raw chicken was relocated so that it was not above any ready-to-eat foods. This is a repeat violation.

Potentially hazardous ingredients under temperature control / or small quantities may be used at ambient temperature during rush periods (to be used up within two hours).
Hand sinks are accessible and supplied with hot and cold running water, liquid soap, and paper towels.
Thermometers available for all cooler units.
Sanitizer available in labeled spray bottles at 100 to 200 ppm chlorine.
Floor areas affected by rodent droppings cleaned/disinfected. Continue to monitor for new pest activity and take appropriate action (e.g. locate and seal potential entry points, clean and sanitize areas affected by new droppings).
