Observation (CORRECTED DURING INSPECTION): -Some knives stored on knife rack were dirty and stored with clean knives. Clean knives were stored in dirty basket behind handsink.
-Noodle making machine had food debris on it. Was used yesterday, but was not cleaned.
Corrective Action(s): -Re-wash/sanitize all knives. Clean knives after use (or every minimum every 4 hours if in constant use). Ensure clean knives are stored in a clean location and not with dirty dishes/utensil.
-Clean and sanitize food equipment after use. Do not leave with food debris on it. Food debris can attract pests.

Comments

-General sanitation was satisfactory. Some food splatter noted on wall behind handsink and prep sink - ensure this area is being cleaned regularly.
-Handsink in kitchen supplied with liquid soap and paper towel
-Staff/public washroom handsinks supplied with liquid soap and air dryer
-Cooler temperatures were 4C or colder.
-Items in coolers were covered to prevent contamination. Reviewed proper storage of raw animal products (beneath ready to eat foods and produce) to prevent cross contamination.
-Observed food safe thawing practices. Items were noted thawing in the cooler.
-Freezers temperatures were adequate. Food was maintained in a frozen state.
-Rice was being held at 70C (in rice cooker).
-Dishwasher met sanitizing requirement. >50ppm chlorine residual detected after final rinse. Operator to obtain chlorine test strips to check sanitizer daily.
-Wiping cloths stored in bleach sanitizer solution (100ppm chlorine) for use on food contact surfaces.
-No signs of pest activity noted at the time of the inspection.
