Corrective Action(s): Foods must be cooled from 60C to 4C within 6 hours max. Please provide a way to cool your soup broth more quickly (i.e. cold water and ice bath, or ice wands.

*observed a small amount of rodent droppings in back storage area. Pest control is being taken care of by operator - ensure that back door has door sweep or weather stripping installed to remove gap in back doors where rodents could enter.
Bleach available for sanitizing, operator indicates that Bleach and water solution is made up for sanitizing cutting boards and food contact surfaces
*Ideally, bleach and water solution is readily available at all times for wiping cloths, please provide a bucket in the kitchen (sanitizer is already available for customer tables.
