Observation (CORRECTED DURING INSPECTION): Chicken wings found at temperatures greater than 4 degrees Celsius in under counter cooler. Wings were internally probed and found to be at temperatures of 8.5 degrees Celsius (photograph taken). Wings were made last night. CORRECTED DURING INSPECTION. (items discarded)
Wings were stored in small container and droplets from steam visible on tightly sealed container lid

Corrective Action(s): Ensure cooked food is cooled according to 60 degrees to 20 degrees Celsius in two hours and 20 to 4 degrees Celsius in 4 hours for a total cooling time of 6 hours total.
To decrease total cooling time place items in the cooler (do not leave on counters for long periods of time), ensure lid is slightly open to allow for heat/steam to escape and place in shallow containers as opposed to large containers.

Observation (CORRECTED DURING INSPECTION): Washing was occurring during inspection. Chlorine was added to wash water. CORRECTED DURING INSPECTION.

Corrective Action(s): Operator was provided with information sheet. Proper washing is to occur as follows: WASH-RINSE-SANITIZE-AIR DRY.
Ensure the chlorine bleach is NOT added to the wash water for proper sanitizing of food contact surfaces.

Observation: The pizza pan separators are made of corrugated plastic. Food and dirt debris is trapped inside corrugated part of plastic and built up on edges.

Corrective Action(s): This is not an acceptable material for intended purpose. The material can not be easily cleaned and sanitized therefore leaving a debris build up in holes of material.
Remove all corrugated plastic pizza pan separators from facility and replace with more suitable product.
