Follow up inspection to check progress of dishwasher maintenance and upgrades. Facility has had new sanitizer line spray arm installed in the dish machine - more hot water is spraying at rinse cycle, and water is hotter. In addition, excess hot water is overflowing to wash tank side, which in turn is helping to keep wash and sanitize temperatures at required levels. 3 x daily monitoring of rinse cycle gauge is continuing, and in addition, temperature change test strips are being used 3 x daily. Digital / electronic monitoring is also being implemented - an alarm will notify if rinse cycle does not meet required temperatures. Thank you for your attention to this matter. No further issues noted at this time.
