Comments

-Sushi prep cooler at 4C (top and bottom).
-Under counter cooler at 4C.
-Front sushi display was at 4C.
-Walk-in freezer (Shared with store) was at -18C. Food items for the sushi area are stored in a designated location.
-Sushi rice had a pH of 4.0. Sushi rice tested and recorded using calibrated pH probe (buffer solutions available on-site). Calibration records are being maintained.
-Temperatures are checked and recorded four times a day.
-High temperature dishwasher had a final rinse temperature of 73C on the dish surface (minimum 71C required for proper sanitizing).
-Sink plugs built into 3-compartment sink.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Staff observed practicing good single use glove practices and hand washing practices.
-Quat sanitizer pail labelled and tested at 200ppm. Sanitizer pail changed every 2 hours.
-Quats sanitizer dispenser tested at 200ppm.
-Sushi cutting boards disinfected using Quats sanitizing solution.
-Plastic wrap on sushi rollers changed every 2 hours.
-Foods properly covered and stored off the ground.
-General sanitation satisfactory at the time of inspection. A couple rodent droppings observed by the sushi prep cooler. Did not find any pest activity in tin cats monitoring stations.
-Facility is currently serviced by a professional pest control operator.
-FoodSafe Level 1 valid until March 24, 2023.
