Deli and Produce:
- Display cooler - good. See above re reach in prep cooler.
- Quats sanitizer used in deli area (meat slicer/knives) - see above.
- Hand sink - see above.
- Staff use disposable non-latex gloves.
- Double sink also available.
- Manager/operator to have a valid Food Safe Level 1 (or equivalent) certificate. Provide information on expiry date. Renew certificates prior to expiry.
- Note: Counter in the is area is very worn and there are gaps between wall and counter. Floor also is difficult to clean. Consider future renovations to ensure surfaces are easy to clean.
- If making cooked ribs in future - keep temperature records and submit an updated food safety plan (note label advises customer to reheat ribs).
Raw Meat, Poultry, & Seafood:
- Triple sink and hand sink in this area.
- Raw meat/poultry area is separate from deli area with different staff.
- Label for stir fry vegetables advises customers to stir fry (cook) this product. Note that vegetables may have come into contact with raw meat.
- Hand sink has liquid soap, paper towels in dispenser, and hot/cold water.
- Walk in freezer, walk in cooler, and display coolers - temperatures are satisfactory. Meat from approved sources.
- Meat grinder is stored in walk in cooler (temperature control) and is currently clean - good.
- Quats sanitizer dispensed at about 200ppm. Wiping cloth stored in sanitizer - change frequently.
- **One spray bottle not labelled - label all spray bottles to accurately show contents.
Store/General:
- Display coolers and freezers - ok. Watch the greek food cooler (bottom shelves ok - re-check top 2 shelves (4C or colder required).
- Large walk in cooler - air temperature/food temperature 6C but went down to <<4C.
- ***Keep daily temperature records and be aware of defrost cycles.
- Ice machine is currently being serviced. Follow directions from ice machine manufacturer.
- Pest control monitoring is in place. Door is closed. Licensed pest control contract with increased frequency in colder months is in place.
- General cleaning (floor) - see above.
- Staff washroom has hot/cold water, liquid soap, and paper towels in dispenser.
Store Manager on site during inspection. Signature not required. Copy of report to be emailed to Store Manager. |
