Observation: Operator stated hot water tank had developed a leak, and had been switched off. Hot water still available in sufficient quantities at time of inspection.
Corrective Action(s): Ensure this is fixed/replaced by tomorrow. Call for reinspection once issue is fixed.

Comments

*General sanitation satisfactory. No pest issues observed during inspection.
*Bottles are sanitized using sodium metabisulphite. Ensure product directions are followed regarding concentration for use.
*Carboys are sanitized using Diversol. Sanitizing machine in use. Solution tested at 50ppm chlorine during inspection; solution due for replacement. Ensure this is maintained between 50-200ppm.
*Hand sinks in washroom and front counter equipped with warm water, liquid soap and paper towels.
*Dry goods, flavourings and other packaged products stored in tidy condition. Note: keep scoops outside of product buckets, or ensure handles are kept out of food.
*Filter unit maintained in clean condition.
*Carboys in use are stored on shelving and kept off the floor.
*Walk-in cooler is not in use.
