Floor grouting replaced in the kitchen and small storage space by dishwasher.
One additional drying rack added, existing drying rack above two compartment sinks has been properly cleaned.
Small cooler under tempura station has been replaced - temperature reads 4C
Sanitation improved around tempura station, kitchen and sushi bar area
Nothing stored inside the handwash stations. No staff belongings stored in cupboard above serving station.
Miso soup at 70C
Food stored in refrigeration units are covered.
Bleach sanitizer in buckets were available in kitchen and sushi bar but measured at 50ppm - reminder to have staff use test strips to verify the 100ppm
Wiping clothes stored in bleach sanitizer buckets.
Small amount of fruit flies present in kitchen handwashing station - ensure to maintain sanitation around this area (e.g. food splash on walls, shelving units).
Temperature logs are in use, refrigeration units are labelled.
Demonstrated to staff how to use the thermometer to determine dishwasher working (max mode).
New menu (110) and new seating number (40) still in compliance.
