Food Safe training (or equivalent course) - In compliance. Manager on site (and other staff) have valid certificates.
Coolers are at 40F or colder. Temperature records are kept.
Cooking of beef - probe thermometer is used. Following food safety plan.
Cooked fish temperature - in compliance.
Hot holding (chicken for chicken burger in hot holding tray) - Temperature of chicken is above 140F (150F food temperature).
Hot holding (beef at meat slicer)- beef temperature 147F - good.
Hand washing stations (2 in main kitchen) have hot/cold water, liquid soap, and paper towels in dispensers.
Quats sanitizer in labelled spray bottle and in third sink (wash, rinse, sanitize, and air dry method) - 200ppm measured - good.
General cleaning - satisfactory. Pay attention to under equipment along floor/wall coving.
Pest control - no obvious signs of pests. Pest control contract is in place. Reviewed last pest control report - good.
