Corrective Action(s): Ensure all chicken is maintained at or above 60 C at all times.
Discard all chicken that has been below 60 C for more than 2 hours. Relocate all chicken less than 2 hours below 60 C to a hot hold unit at or above 60 C (top section).

Corrective Action(s): Ensure the hot hold unit is able to maintain food consistently at or above 60 C.
Unit has been unable to demonstrate it can function in good working order reliably - therefore the Bottom Grab & Go section of hot hold unit must cease to be used and turned OFF
