Met with Loralee, Business director, at the time of the inspection. Hand delivered the Permit to operate. She confirmed that they found misplaced Permit. Discussed the cleaning/sanitation process ( use quat as approved sanitizer due to the being on site septic ) all staff in the kitchen have a FS level 1 training daily temp logs are up to date Discuss the canning process ( the ph concentration, and lab results ) Labels are containing accurate information ( just adding a production date )
