Observation: The door on the salad prep cooler (located in the front of house) not securely attached.
The walk-in cooler door does not shut snuggly.
The protective cover on the light fixture in walk-in cooler is loose.
Corrective Action(s): Fix the doors on walk-in cooler and the salad prep cooler so that they open and close properly.
Replace the missing tube light and ensure the light cover is securely attached. ( ASAP).

* Clean the fan assembly in the salad prep cooler in the kitchen. Do not keep any open food containers in cooler bottom part.
* Clean the floor-wall junction underneath the dishwasher to remove soup and food build up ( By January 5, 2019).

Dishwasher final rinse: 50 ppm chlorine at the plate surface.
Quats sanitizer (Suma D10) tested 200 ppm.
Wiping cloths stored in 200 ppm ( Suma D10 ) sanitizer. Good.
Liquid soap and paper towels available at the hand sink.
General sanitation is satisfactory.
Bar coolers below 4 C.
