Observation (CORRECTED DURING INSPECTION):
Two flats of raw, in-shell eggs were stored on the counter top. Staff explained that all the eggs are generally used within 2 hours. Uncoooked eggs are perishable and require to be stored in the fridge (below 4C) to prevent bacteria from growing. During the inspection, staff placed one flat of eggs back into the cooler, and assigned a 1 hour holding time on the flat remaining on the counter.
Corrective Action(s):
A time recording system shall be developed and used to ensure the raw, in-shell eggs are being used within 2 hours, when stored on the counter. If the 2 hours is exceeded, the eggs shall be discarded. All staff shall be trained on the new timer system for the eggs.

Observation:
Built up grease found along the back wall behind the bun racks and flat grill (around the table legs and wheels). Grease will attract pests.
Corrective Action(s):
Move the bun racks and/or the flat grill away from the wall every day so this area can washed to remove grease and food debris.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers were 4C or colder; freezers were -16C or colder; hot holding units were 60C or hotter; thermometers present; and temperatures recorded daily.
- High temperature dishwasher had a rinse cycle temperature of 80C at the plate's surface, as per max/min thermometer.
- Quats sanitizer in cloth buckets and spray bottles was 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; covered; dated coded; labeled; in groups w/ proteins on lowest shelves to prevent cross contamination; and 6" off the floor on shelves.
- No expired foods for sale or in use. FIFO rules being followed.
- FoodSafe certified staff present.
- General sanitation is good, address the mentioned area.
- No signs of pests. Air curtain installed above the drive-thru window. Ensure this is turned on from Spring to Fall to exclude flies.
