Observation (CORRECTED DURING INSPECTION): Cutting board, knife, coffee pot could not be verified to be washed and sanitized properly.

Observation: 1) Box of fresh unpackaged cilantro stored underneath UV fly light infront of swing doors

5) Unsure of handwashing practices when observing staff

Corrective Action(s): 1) Store fresh unpackaged foods in a manner that prevents contamination. When UV fly light glueboards are changed, there is a high chance of dead flies falling down to the area below and into the vegetables, which would contaminate them and render them unsuitable for sale.
2) Heavy duty gloves and other gloves are not cleanable. Review handwashing and glove use practices with staff and ensure staff fully understand this. Heavy duty gloves are intended for moving pallets and other rough jobs that require durable hand protection. Using the same glove to handle food is not acceptable.
3) Quat sanitizer dispenser measured above 400ppm while the label on the bottle states 200ppm is required. Dilute mix to achieve 200ppm quat sanitizer to prevent contamination of food from high chemical concentration of food contact surfaces. Refer to fraser health 2 compartment sink chart for appropriate dishwashing measures.
4) Do not trim or handle exposed foods in back storage area. Move this process to a nearby handwashing station such as the demo room or rearrange staff room to adequately handle foods.
5) Handwashing and designation of staff must be reinforced. Staff who handle meat, decorative plants, and fresh fruits and vegetables must be kept separate to prevent cross contamination. decorative plants may have been sprayed with pesticides to preserve their longevity and art value.
