Observation: 1. Flats of raw eggs were stored on the shelf above cooked spring rolls in the walk-in cooler.
2. Missing light shield over the fixture across from the 2-compartment sink.
3. Improper dispensers, bowls with no handles, were used and stored within bulk condiment containers.
Corrective Action(s): 1. Rearrange the storage hierarchy to ensure cooked food, ready-to-eat food and produce are stored on a higher shelf and away from raw food, including raw eggs.
2. Purchase light cover or individual light bulb sleeves for the fixture missing the shield.
3. Remove all improper dispensers from the bulk condiment containers and replace with ones with handles. Store in a manner where the handles do not come into contact with food.

Observation: Cardboard noted being used to line shelvings in the facility (below condiment containers).
Corrective Action(s): Remove all cardboard as cardboard may not be used as liner. As per your approved floor plan, all surfaces in the facility must be imprevious to moisture, easily cleanable and durable.

Routine inspection:
Handwash stations, including washrooms, equipped with hot and cold running water, liquid soap and paper towel.
Note: A bowl and cup were noted respectively in both handwash sink basins at the start of inspection. Please be mindful that handwash stations are only for handwashing and must not be used for dumping or washing food contact items.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Rice was being held at 64.0C in the rice cooker.
Proper method of thawing observed. Frozen food was being thawed in a reach-in cooler - excellent.
Sanitizer spray bottle was prepared and readily available. 200 PPM chlorine residual detected in the spray bottle.
High temperature dish machine was able to reach 72.2C at the plate level during the rinse cycle.
Cleanliness of the cookline was acceptable. No grease buildup noted on the fume hood and deep fryer areas.
Food contact items noted sanitary and in good condition.
No signs of pest activities noted during the inspection.
Operator has decluttered the facility significantly as compared to before the change in ownership - overall sanitation satisfactory - keep up the good job.
Operator has a valid FOODSAFE level 1 certificate.
