Observation: Found vegetables being cut and prepared in the back hall where there is no hand washing and no proper on food preparation table

Corrective Action(s): Stop food handling in corridor, must prepare all food in an approved locations of the kitchen (i.e. food preparation areas, and cooking area.)

Observation: 1. Found multiple inserts and mandolines put away with food debris still on them.
2. Found inserts stacked and put away still wet.
3. Found the clean side of the 2 compartment sink to have food debris all over
Corrective Action(s): 1. Must ensure all equipment and dishes are washed to removed all food debris before sanitizing and putting away. Re-wash and sanitize all dirty items.
2. Must ensure all inserts are completely dry before stacking, unstack inserts and stagger them until dry.
3. Food is not to be prepared on clean side of dishwashing sinks, do not store dirty dishes on clean side of dishwasher. Wash and sanitize the clean side of dishwashing area before doing more dishes.

Observation: Found grease and food build up in hard to reach areas behind and under equipment and shelving units including around hot water tank, under cook line as well as ventilation hood over cook line.
Corrective Action(s): Ensure premises is thoroughly cleaned to remove all food debris and grease from the above noted areas and all hard to reach areas.

- Prep cooler was 3 C
- 2 Door cooler was 4 C
- 2 door freezer was -15 C
- walk in freezer was - 21 C
- No signs of pest activity noted during inspection
- Wiping rags were in 200 ppm chlorine, spray bottles had to be diluted to 200 ppm at time of inspection
- Dishwasher had a final rinse of 172 F on gauge, and 74 C on plate
- Hand sinks liquid soap, paper towel
NOTE: new grease trap has been installed between old grease trap and dishwasher.
