Comments

Routine inspection conducted. The following observations were made:

- Ambient temperature in meat processing area: 5C
- Large walk-in cooler: 1C
- Stand-up freezer at -18C
- Customer display coolers up front at 4C
- Handwash stations adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- 3-compartment sink available for manual warewashing. Food service worker reminded to sanitize after washing and rinsing with 200 ppm quaternary ammonium compound
- Quaternary ammonium compound dispenser releases 200 ppm quats
- Deli worker uses 3.95% hydrogen peroxide solution for disinfecting. However, the label states that it only reduces bacteria by 99.9% within 5 minutes which is not to the same standard as a food contact sanitizer, which reduces bacteria by a 5 log (99.999%) within 30 seconds. Therefore, use the sanitizer bottle labelled "sani-stuff" which contains quaternary ammonium compound (quats)
- Food service worker was in the middle of cleaning and disinfecting equipment at time of inspection

The following requires your attention:
- No sanitizer logs were taken recently. A new log sheet will need to be produced and the first person on shift must log the sanitizer concentration from the dispenser using test strips
- No temperature logs present. Please resume taking temperature logs for the following areas: Display coolers up front, walk-in cooler, and freezer
