Observation (CORRECTED DURING INSPECTION): Knife and scraper device in knife rack observed with food debris affixed. Stainless steel inserts on drying rack observed with food debris affixed.
Corrective Action(s): Ensure staff are properly trained on how to properly washwash utensils

Observation: Wire rack shelving above the 3 compartment sink as well as wire rack shelving inside the main walk in cooler requires cleaning. Underside of counter above the sandwich preparation station requires cleaning
Underside of counter above hot holding gravy unit requires cleaning.
Ice machine requires cleaning.
Handles on the cooler adjacent to the chicken station require cleaning.
Corrective Action(s): Once cleaned, ensure all the above are on a regular cleaning schedule.

Observation: Valve to turn on the cold water supply at the 3 compartment sink was in the off position. This was turned back on.
Mop sink plugged and filled with water.
Corrective Action(s): Ensure cold water supply is always available at 3 compartment sink
Unplug piping so that mop sink is available to discard waste water. Waste water may be discarded down a toilet until repaired. Waste water may not be discarded in any sink in the premises or down any outdoor storm drain.
