Follow up to report MBEK-CTTU8J.
Low temperature dishwasher measured 46 degrees C and 50 to 100 ppm chlorine sanitizer in the rinse residual at the utensil surface. It was stated that dishwasher is being checked daily. Chlorine test strips on site.
Vegetable chopper in use at time of inspection. Ensure vegetable chopper is properly cleaned and sanitized following use.
Cooled potentially hazardous food in walk-in cooler measured at an internal food temperature of 4 degrees C or less. Three ice wands available for use on site. Liquor bottles noted on previous inspection report have been removed.
Probe thermometer available on site for internal food temperature checks.
New thermometer available within preparation (sandwich) cooler noted on previous report.
Food items covered in walk-in cooler.
Food not observed to be stored directly on floor (e.g. onions, potatoes).
Ice scoop stored on clean dish outside of ice machine.
