302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Two of three warewashing sink compartments were completely obstructed by draining racks. Utensils/equipment stored on draining racks and only one compartment available for ware washing. One of three sink plugs is not available on site.
2. No sanitizer available.
Corrective Action(s): 1. Draining racks removed at time of inspection. A bleach water sanitizing solution was prepared at 100 ppm chlorine in the third compartment at the time of inspection. Ensure proper manual ware washing and sanitizing procedures are followed and ensure all equipment/utensils are sanitized. Manual ware washing procedures are posted at the three compartment sink.
2. Bleach water sanitizer prepared at 100 ppm chlorine (bucket). Ensure that all equipment / utensils / food contact surfaces are properly sanitized in order to kill or inactivate potential pathogens.

Observation (CORRECTED DURING INSPECTION): Paper towel dispenser located over drain racks at three compartment sink. Utensils/equipment present on drain racks.
Corrective Action(s): Ensure no items are stored under the paper towel dispenser to prevent water from hands from dripping onto equipment/utensils. Items removed at time of inspection. Have dispenser relocated to hand sink area. Date to be corrected by: July 5, 2019.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Mould / mildew and/or food debris observed in the following areas:
1. Door seals of front under counter cooler.
2. Caulking located behind hand sink and behind three compartment sinks.
3. Plastic drain rack and board located to right side of ware washing sinks.
Corrective Action(s): Ensure areas are properly cleaned and/or re-caulked as needed to remove mould / mildew and/or food debris. Date to be corrected by: July 2, 2019. Note: Plastic drain rack was placed within ware washing sinks at time of inspection to be washed, rinsed, and sanitized.

Observation: Wall mounted soap dispenser contained no soap. Staff stated dispenser was inaccessible. Soap refill was located on counter adjacent to hand sink (soap available).
Corrective Action(s): Ensure that soap is available within the dispensing unit. Obtain key for dispensing unit or provide a new dispensing unit. Date to be corrected by: Today.

Observation: No thermometer observed within far back area freezer.
Corrective Action(s): Ensure all cold holding units are equipped with thermometers accurate to 1 degree C. Date to be corrected by: July 26, 2019.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Only staff member on site does not have FOODSAFE Level 1 or equivalent.
Corrective Action(s): Ensure that at all times, at least one staff member on duty holds a certificate for the successful completion of FOODSAFE Level 1 or its equivalent. Date to be corrected by: Today. Have additional staff certified as needed to meet these requirements.

- Front display cooler at 3 degrees C
- Under counter cooler at 2 degrees C
- Back area upright cooler at 3 degrees C
- Back area freezers (two) at -17 to -18 degrees C
- No hot holding
- First in first out procedures appear to be in use
- Ice machine and scoop maintained in clean condition
- Hot and cold running water, liquid hand soap, and single use paper towels are available for hand washing
- Bleach is available on site
- Permit posted at front
Notes:
1. Provide a third sink plug for manual ware washing sinks.
2. Large amount of ice build up present in both freezers. Remove ice build up.
3. Ensure all packaged food items located in back area are stored off the floor to facilitate proper cleaning.
4. Ensure temperature records are maintained as per your food safety plan. Most dates are missing records for temperature logs.
