Main kitchen:
Coolers are at 4 C or colder.
Hand washing stations have liquid soap and paper towels.
Hand washing sink inside of the plating area: replace paper towel dispenser as it is worn and also does not dispense paper towels very easily.
Hair nets and aprons/uniforms worn by staff.
Temperature records are being kept: Include corrective actions if temperatures are outside of the critical limits.
Reheating time to service time is < 2 hours (in carts).
Quats sanitizer in spray bottles - 2 checked and both area at 200ppm.
Triple sink - now has a chemical sanitizing rinse of 200ppm.
Dishwasher has a hot water final sanitizing rinse of 180F (at gauge) and 160F (measured inside of the machine).
Records for the dishwasher are being kept.
Pest control monitoring is in place.
Note: Food Safe certificates expire after 5 years. To renew Food Safe if certificate was obtained before 2013, an online refresher course can be taken.
