Observation (CORRECTED DURING INSPECTION): Cold toppings (tofu, peanuts) stored at 25C at room temperature.
Corrective Action(s): Store small portions of toppings over ice, to ensure temperature control (ie <4C) is maintained, as per Food Safety Plan. This will be verified at the next follow up inspection.

Observation (CORRECTED DURING INSPECTION): No surface sanitizer at the time of the inspection.
Corrective Action(s): Staff provided surface sanitizer at 100ppm chlorine bleach concentration at the time of the inspection. Operator must have sanitizer available at all times.

Comments

- General sanitation is satisfactory.
- Easy access to handwashing station, supplied with hot/cold running water, soap, paper towels.
- 2-compartment sink available for manual warewashing.
- Dry storage area has adequate space and wire racks.

Temperature control:
- All coolers at < or = 4C
- All hot warmers > 60C.
- Time/temperature monitoring for hot tofu, sugar, and gravy available and kept up to date.
- Three hot tofu containers on site, as per Food Safety Plan.
- Missing daily temperature log for all coolers. Immediately begin daily temperature log for all coolers.
