Observation (CORRECTED DURING INSPECTION): There was no sanitizer available in the meat preparation area.
Corrective Action(s): Staff filled up buckets and bottles with 200 ppm QUATS from the dispenser at the time of inspection. Ensure sanitizer is always available in all food preparation areas. All counters and food contact surfaces must be sanitized every 2 hours or after each use.

Comments

Routine inspection conducted.

Temperatures:
- Walk-in cooler was at -1C.
- Walk-in freezer was at -24C.
- Chest freezer was at -21C.
- Retail coolers were at or below 4C.
- Retail freezers were at or below -18C.

All coolers had accurate thermometers.

Sanitation:
- Hand washing sink was adequately equipped with hot/cold running water, liquid soap, and disposable paper towels.
- Sanitizer dispenser dispensed 200 ppm QUATS solution. Test strips were available on site.
- Knives were in good sanitary condition and stored on a magnetic strip.
- Ware washing sinks had plugs.
- Staff claimed that the meat cutters and slicers are cleaned after each use - GOOD.

Storage:
- Food was stored off the floor.
- Items inside the coolers were packaged. No open items were noted.

Pest Control:
- Facility is monitored by a professional pest control company.
- No pest activity noted in the meat department. However, pest activity was noted in the deli department which is next to the meat and fish departments. Rodents can freely travel between the zones.
NOTE: Monitor rodent activity closely and inform the pest control practitioner about the noted activity. Follow through with their recommendations.

Administration:
- Temperature logs are up to date.
- Pest control inspection reports are to be emailed to the inspector for review.
