A routine inspection was completed:
- Panini sandwiches stored in u/c cooler below panini machine. Panini machine found on counter top in front bar area.
- Disposable utensils and dishware used to service panini. Staff use single-use gloves to handle panini sandwiches.
- Front hand washing sink stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottles and cloth buckets had strength of 200ppm.
- Glasswasher had [I2] of 12.5ppm.
- Valid, FoodSafe certified staff present.
- General sanitation level is good.
- No signs of pests.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups; and foods stored 6" off the floor on shelves and racks.
- Coolers 4C or colder.
- Upstairs kitchen has been removed and seating area installed.
- Floor plans for installing a bar in the upstairs seating area AND the new, main kitchen are in the works.
ACTION:
- Submit the floor plans to our office for health approval, PRIOR to starting any installation or renovations.
- Use the small u/c cooler, storing juices, to store the panini sandwiches as it is made to store food. The current cooler is made to store bottles of wine, and it can NOT keep foods below 4C at all times. The compressor is not made to quickly cool food when the door is opened and closed.
- Place a thermometer in the panini cooler so staff ensure the temperature is 4C or colder at all times. |
