-Temperature of auto sham hot holding unit in sandwich area is now being set at a higher temperature (150F) to ensure food is maintained >60C. Limited quantities of product being held in hot holding unit. Bacon was 62C.
-Exhaust canopy has been serviced. Ensure in future canopy is cleaned/serviced at regular interval to ensure no accumulation of grease
-Report from Pest Control Technician (22-Mar-2018) was submitted via email. Recommendations from Pest Control Technician have been completed (covering gap near walk-in cooler, installing door sweep and weather stripping). Floor in dishwashing area has been cleaned to remove droppings and area has been organized/cleaned to facilitate monitoring and cleaning. Ongoing activity has been noted near ice machine where bread is being stored. Manager reported bread will now be stored in walk-in cooler or pest proof bins to eliminate food source. Continue to monitor and clean up droppings and sanitize area immediately if noted. Pest Control contract is in place with monthly service and on-call if additional service needed.
