Observation: 1) Floor underneath cooking line has large buidup of oil/grease/debris that has turned black
2) Counters and surfaces throughout kitchen are not clean. A white paper towel was used to wipe across various surfaces and counters in kitchen and the towel came back gray/black from the dirt
3) Dry storage area is disorganized, old boxes need to be recyled.
Corrective Action(s): Clean all of your surfaces (especially food contact surfaces) thoroughly. Organize your dry storage area and remove any items from your kitchen that you do no use and are collecting dust.

Various domestic coolers and cooler/freezer combination units located throughout premises.
All coolers were at 4 deg C or less
All freezers (both chest freezers and freezers in the domestic cooler/freezer unit) were at -18 deg C or less
No hot holding at time of inspection
Ensure to keep all foods covered in coolers and freezers -->Use plastic wrap to cover
Bleach water in rag bucket at 100 ppm chlorine residual, ensure to store your rags in this solution when not in use. Do not leave rags out on the counter.
High temperature dishwasher achieved 73.4 deg C on rinse cycle
3 compartment sink with beach also available on site
Staff washroom properly stocked with soap/paper towels
No signs of pests at time of inspection
