Observation (CORRECTED DURING INSPECTION): Potentially hazardous foods in line cooler ranged in temperature from 6C (cream cheese) to 10.2C (Chicken salad). Temperature records from 1.5hr earlier indicate temperature of product and unit was <4C (40F).
Corrective Action(s): Once notified, staff took action according to food safety procedures. Chicken salad was discarded. All items (butter, cream cheese, cheese) at the bottom of the cooler were transferred to the back cooler.

Observation: Cooler is not maintaining product at 4C or colder. Thermometer in unit read 10C. Temperature of product stored in cooler ranged from 6.6C (below) to 10.2C (top of unit).
Corrective Action(s): Repair cooler so that it is capable of maintaining product at 4C or colder. Owner has contacted technician. Technician scheduled to arrive this afternoon. Correction date: Aug. 30/17
*By the end of the inspection, temperature of unit was 3C; however action must still be taken to ensure cooler can maintain product at 4C or colder. Continue to monitor temperature closely and take action as per food safety procedures.
