Observation (CORRECTED DURING INSPECTION): Liquid soap at front hand sink was not available as the dispenser was clogged/not working. Other hand sink with properly working liquid soap dispenser is available in the meantime. Staff stated they have been using that hand sink instead.
Corrective Action(s): Both of your kitchen hand washing sinks and soap/paper towel dispensers must be stocked and working properly at all times. Continue using the other hand sink in the meantime, until the soap dispenser is fixed. Also see violation code 308.

Observation: 1) Opened tin cans of food were found stored in the prep cooler.
2) Garbage bags were being used to line food storage crates (onions).
Corrective Action(s): 1) Once tin cans have been opened, food contents must be transferred to food-grade containers.
2) Garbage bags must not be used for food storage as they may contain chemicals. Only use food-grade materials for storage of food.

Observation: Some mouse droppings were noted on the floor in corners of the back area.
Corrective Action(s): Clean and sanitize these areas, and monitor for new activity on a daily basis. Regular pest control is in place.

Observation: Liquid soap dispenser for front area hand sink was clogged/not working properly.
Corrective Action(s): Repair/replace the soap dispenser. Also see violation code 401.

Observation (CORRECTED DURING INSPECTION): Counter-top deep fryer was found plugged-in in the back area again, where no ventilation canopy is available.
Corrective Action(s): The counter-top deep fryer may only be used under the ventilation canopy. This is a repeated violation. Note that future non-compliance may result in enforcement action(s) being taken.
Staff relocated the counter-top fryer at time of inspection.

Comments

- Routine inspection.
- Hand washing sinks were accessible/unobstructed and properly supplied with hot/cold running water, liquid soap, paper towels. However, one liquid soap dispenser was not working properly (see violation codes 401 and 308 above).
- Bleach sanitizer solution available at 100 ppm to 200 ppm (chlorine residual) in designated spray bottles.
- Triple-sink available for manual warewashing maintained in sanitary conditions. Sink drain stoppers available for use.
- Food stored properly covered and off the floor. *Ensure only food-grade materials are used, and ensure opened tins of food are not stored in the tin. Contents of tin cans must be transferred to other food containers/inserts. See violation code 209 above.
- Coolers measured 4C or colder.
- Chest freezers were satisfactory.
- Hot-holding available at 60C or hotter.
- Accurate thermometers available.
- Dry storage area satisfactory.
- Secondary cook step is done for donair meats - good. Ensure any leftover cones at end of day are shaved down and undergo a secondary cook step prior to cooling for cold storage.
- Equipment and utensils maintained in sanitary conditions.
- Your counter-top deep fryer may only be used under your ventilation canopy (conditional upon approvals from the City fire department). See violation code 311 above. Future non-compliance may result in enforcement action(s) being taken.
- General sanitation satisfactory.
- Pest control is in place. *Some old mouse droppings noted in back - see violation code 304 above).
- Manager onsite has FoodSafe equivalent.
