Comments

- Operation processes plant based frozen foods at YVR Prep. Products are intended for infants. Products are offered for sale directly for customers, at markets, and at retail locations in the Lower Mainland. Products are not available outside of BC.
- Operation has an hourly agreement with YVR Prep. Agreement includes dry storage (speed rack), walk-in cooler, and walk-in freezer space allotment. Operating hours are normally weekends and weeknights.
- No food processing at time of inspection.

- Preparation and processing takes place in Hot Kitchen (generally Station 6 and 7 due to proximity to required cooking equipment). Cooked product is flash chilled in blast chiller and then placed in walk-in freezer to be frozen. Frozen product packaging takes place in Cold Prep Room. Frozen product is transported in coolers with ice for delivery. At this time, transport time is 1-1.5 hours max. (within the Lower Mainland). Operator uses a thermometer to monitor temperatures during delivery transport.

- Handsinks accessible to Station 6 and 7 and in Cold Prep Room are supplied with hot and cold running water, liquid soap and papertowels.
- Walk-In Cooler: 3 deg C
- Walk-In Freezer: -18 deg C
- Storage practices appears satisfactory. Items on speed rack are protected from contamination. Walk-In freezer speed racks are covered to protected processed food from contamination.
- 200 ppm Quats sanitizer available for sanitizing food contact surfaces. **Ensure that Quats test strips are used to verify sanitizer concentration before using.
- High Temperature Sanitizing Dishwasher: 79.1 deg C at dish surface; Final Rinse Temperature Gauge reading: >82 deg C
