Observation:
Hot holding unit wasn't being turned on. Cooked meats stored inside were at 47 deg.C and 37 deg.C internal temperature. operator stated that the meats were placed in the hold holding units 2 hours ago when they open for operation.
Corrective action: reheat the meats and other food items in the hot holding unit to a minimum of 74 deg.C. Ensure Hot potentially harzardous foods are stored at or above 60 deg.C in the hot holding units.

- Mouse droppings have been cleaned with bleach solution. Areas cleaned include shelving racks, floors around the two compartment sink.
- General sanitation has improved. Deep cleaning has been done in the following areas:
- underneath/around the two compartment sink.
- behind the grease trap
- No further actions required.
