Observation (CORRECTED DURING INSPECTION): Noted cheese on cookline at 17C to 19C. No time tracking being done. Instructed staff to discard cheese at time of inspection. This issue was noted on the previous inspection report.
Corrective Action(s): Ensure cheese is stored at 4C or less at all times. Staff do not appear to be adhering to time tracking requirements. There is to be no room temperature holding of cheese at this location. All cheese to be stored in mechanically refrigerated unit until health approval is granted for time tracking.

Observation (CORRECTED DURING INSPECTION): Noted several clean stacked dishes in the plating area were set and still had food debris on them. Instructed staff member to have the dirty/wet dishes rewashed.
Corrective Action(s): Ensure dishes are properly washed. Properly prescrape/rinse dishes before putting in dishwasher. If dishes are still visibly dirty after being put through the dishwasher then have then washed in the dishwasher again. Ensure dishes have properly air dried before storing away.

Observation: Noted paper cup stored in oreo bulk food bin container being used to dispense oreos. Paper cup was worn out and peeling.
Corrective Action(s): Obtain proper scoop and keep scoop stored outside of the oreos.

Observation: Noted minor fruit fly activity in the back area.
Corrective Action(s): Keep back area clean and organized. Keep dishwashing area dry. Report pest activity to technician and follow their recommendations.

Observation: A) Noted single use disposable paper cup being used to dispense oreos from bulk food bin. Paper cup appears worn out and paper is coming off. This issue was noted on the previous routine inspection.
B) Noted several reusable plates stained/worn out and/or chipped.
Corrective Action(s): A) Obtain a proper reusable scoop for the oreos and do not store the scoop inside the food.
B) Discard any stained/worn/chipped plates and replace with new ones.

All hand wash stations had soap, paper towel, hot and cold running water.
All coolers 4⁰C or less (walk in, under counter, prep cooler...etc).
Walk in freezer -18C and ice cream freezer -12C
All hot holding higher than 60⁰C (fries, mushrooms, gravy, chili)
Back door was closed at time of inspection.
Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container.
Scoop stored in dipper well with cold running water.
Quat sanitizer at source and in containers with cloths submerged 200ppm.
High temperature dish washer achieved 71⁰C (with thermolabel).
