Staff is now preparing large batches of meat for lunch rush only (patties and sliced pork), so that meats are cooked on the grill, held on the top of the grill for no more than 2 hours.
In slower hours, the patties and sliced pork are made in smaller batches, cooled down on rack above handsink and then placed in cooler. The meats are then reheated upon order.
Cooling is done within half hour so that temperature drops to 20C before it completes the cooling process.
Small amounts of meat were observed to be stored in stainless steel inserts, single layer only. Probe thermometer in use.
Same method is used for spring rolls.
-->The above method is ok if there is time tracking on the large batch of meat and spring rolls made during lunch rush.
Tongs are properly stored in inserts.
Bar handsink is fully stocked and accessible.
A separate container is designated to store dirty coffee filters.
Food has been relocated so they are not sitting on the floor.
Basket strainers for washing vegetables have been relocated so they are on the wall mounted shelves, not beside mop sink.
No food equipment used for restaurant is beside mop sink.
Duct tape is removed from splash guard by mop sink.
100ppm bleach sanitizer is available in bar and kitchen.

Note: wooden bench in seating area has not been properly sanded and sealed on the inside (where take out containers are stored). Please complete this asap so cleaning on these surfaces can be done properly.
