205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Raw eggs and 4 bins of food items for the hot pot was stored at room temperature near the cooking equipment. The internal food product temperature was measured at 9C. Staff stated the food item had been stored at room temperature for less than 1 hour.
Corrective Action(s): Staffs moved the food item back into the walk in cooler. Do not stored any potentially hardous food at room temperature for more than 2 hours. If potentially hazardous food needs to be stored at room temperature, store them on ice bath for less than 2 hours.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Mold and dirt build up observed on the inside wall of the ice machine. This can contaminate the ice stored inside.
Corrective Action(s): Clean and sanitize the ice machine immediately and develop a daily cleaning schedule. Discard all the ice in the ice machine right now and also discard the first batch of ice after cleaning and sanitizing the machine. Correct by: immediately

Observation (CORRECTED DURING INSPECTION): A bag of food item was stored in the hand washing station near the dishwasher at the time of inpection.
Corrective Action(s): Do not store any items in the hand washing station. Hand washing station should be free of obstruct at all time to facilite hand washing by the operator and staffs. The bag of food item was remove by the staff.

Observation: Walk in cooler, glass door cooler and under the counter cooler did not have accurate thermometers available for temperature check.
Corrective Action(s): Obtain an accurate thermometer for each of the cooler mentioned above.

Comments

Routine inspection:

- Under the counter cooler at 4C.
- Up right cooler at 4C.
- Walk in cooler at 2C.
- Glass door cooler was operational. Monitor the temperature on a regular schedule.
- 2 chest freezers at -20C.
- Up right freezer was operational.
- Soup hot held at 63C.
- Hand washing stations were provided with hot/cold running water, liquid soap and single use paper towels.
- Low temperature dishwasher dispensed 100 ppm chlorine at the plate level. Test strips for chlorine available on site, however dishwasher logs were not maintained.
- 200 ppm bleach sanitizer available from spray bottle.
- Dry food products stored off the floor.
- Dry non-food products stored in the roof.
- General sanitation satisfactory.
- No pest activities observed.
