Cooling units less than 4 C
Freezer (walk-in) noted at -2 to -6 C. Compressor did not look to be engaging forced cold air. No temp logs maintained at time of inspection. Unit might be in defrost cycle? Monitor.
**Start temp log system as soon as possible for all cooling, freezing and hot holding.
Keep an eye on the floor in the walk-in cooler to ensure there is no build up of food debris over multiple days. Make sure staff at least sweep daily.
Dishwasher at 75 C at plate.
Handwash stations all stocked and functional.
Sanitizing spray bottles all measured 200 ppm quats. Most changed daily.
