Observation (CORRECTED DURING INSPECTION): Utensils and equipment are washed with soap and water - no sanitizing step. Operator stated utensils are equipment are sanitized at the end of the night.
Corrective Action(s): All utensils and equipment must be washed and sanitized after each use. Sanitizing can be completed with the high temperature dishwasher or with a 100ppm bleach solution. Utensils and equipment was washed and sanitized in the high temperature dishwasher at the time of inspection.

Comments

-Sandwich prep cooler was at 4C (top and bottom).
-Upright cooler was at 4C.
-Display cooler was at 4C.
-Dairy cooler was at 4C.
-Under counter cooler was at 4C.
-Upright freezer was at -8C.
-High temperature dishwasher had a final rinse temperature of 79C on the dish surface (minimum of 71C required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pails were tested at 100ppm.
-Ice machine was clean and sanitary.
-Foods stored off the ground and covered.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection
