Handsink equipped with liquid soap, paper towels, hot/cold running water
All temperatures satisfactory:
-Large display cooler at front area at 2.8 deg C
-Open display cooler in front area was initially at 6 deg C (operator indicated it was on defrost cycle) but towards end of inspection cooler had gone down to 3.2 deg C
-Meat display counter coolers both at 2-4 deg C
-Walk in coolers in back area at <4 deg C
-Freezers at -18 deg C or less
-Operator indicated that raw meats are only ordered when requested by customers. The raw meats are kept separate from all deli/cooked meats.
-Stove in back area has been previously approved for frozen soups only (no thawing, cooked directly from frozen). No cooking of any meat items are allowed as you do not have any ventilation system.
-Back door was closed with screen in place
-General sanitation satisfactory, continue to organize/de-clutter back room area and remove any items you do not use for the store
-3 compartment sink in back area with bleach available to sanitize
-Quat sanitizer spray at 200 ppm Quats located underneath handsink behind the meat display cooler
