- Walk-in freezer at < or = -18C
- Hot holding unit (soups) at > or = 60C
- Temperature monitoring system is in place
- High temperature dishwasher is available. Final rinse temperature reached 77.9C at the plate level.
- 200 ppm Quat sanitizer available in multiple spray bottles
- Ice machine is satisfactory. Ice scoop is stored in a sanitary manner.
