Observation (CORRECTED DURING INSPECTION): Greek potatoes stored in small rice cooker measured at 47C.
Corrective Action(s): Potatoes discarded. Discussed with operator that if a hot holding unit is used, it must keep foods at 60C or hotter. Rice cooker can be replaced with a working one, or potatoes reheated by microwave to order, or keep hot over stovetop. The small rice cooker is not operational and should be removed from facility.

Observation (CORRECTED DURING INSPECTION): Rice spatula with food debris being stored in container of water at 23C.
Corrective Action(s): Water emptied and refreshed. Reminded kitchen staff that water must be changed more frequently especially if there are visible food debris build up, and must be kept at <4C (ice water bath) or over 60C (would need to get separate warmer).

304 - Premises not free of pests [s. 26(a)]
Observation: Mice droppings and a couple of rat droppings were still identified in the same spots in the dry storage shelves downstairs (by seasonal decor).
Corrective Action(s): Please remove droppings, sanitize the surface and continue to monitor for pest activity here. Showed droppings to staff onsite.

Comments

Handsink fully accessible and equipped in the kitchen.
Raw meats stored on the bottom of cooler shelves and unused food products were covered at time of inspection.
Cleaning in the undercounter coolers completed but display thermometer is still missing.
->please replace with a working, accurate display thermometer as each refrigeration unit needs one
Bleach sanitizer is available and being used in the kitchen (100ppm)
Ice cream freezer has been reorganized
Espresso machine area and display cooler cleaning improved; please have staffs attend to these areas more frequently
->reminder to refrain from using aluminum to line shelves as the surface cannot be properly cleaned
Staff informed that new exhaust hood filters are being replaced by professional company cleaning the hood (ensure they fit properly to allow for proper ventilation)
Two drain plugs obtained and new FHA two compartment warewashing sign adhered to wall for reference
Kitchen ceiling light appears to be brighter
Back door remain closed at time of inspection.
No open food in dry storage downstairs (paper bag by door is used to store plastic wastes)

Pending:
1) Duct tape still being used for chest freezer frame downstairs (unit closest to furnace). Please have the frame properly replaced, or entire chest freezer replaced. It is also an option to remove the chest freezer altogether as not all chest freezers are at full capacity.
