203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): One insert of beans was noted cooling on the counter in an ice bath at start of inspection. Probed internal temperature at the time was 35C, staff on site were uncertain of exactly how long ago the food started cooling. 2 hours later, insert of beans is still on the counter and ice bath has melted. Probed internal temperature at this time was 25.7C.
Corrective Action(s): Discard beans immediately, it has been time-temperature abused.

Reviewed cooling curve with staff on site:
> 60C to 20C within 2 hours
> 20C to 4C within 4 hours.

If food has not reached 20C within 2 hours, it must be discarded.

Staff must monitor the cooling process of cooked foods to ensure that maximum time or temperature have not been exceeded. This invovles using a probe-tip thermometer to obtain the INTERNAL temperature of food, as well as time-tracking.

Observation (CORRECTED DURING INSPECTION): Sanitizer solution was not readily available for back of the house. When prepared, solution was being diluted with water and measured 0ppm QUATS.
Corrective Action(s): A sanitizer solution must be readily available to clean and sanitize food contact surfaces at all times. Do not dilute the solution with water. Newly prepared solution measured 200-400ppm QUATS.

Observation: One mouse caught in snap trap next to the hot water tank.

Corrective Action(s): Remove mouse.

Observation: Entry points for rodents noted below the dishwasher and to the left side of the ice machine just before the swinging doors to the bar area.
Corrective Action(s): Determine if the large hole in the wall next to the ice machine is an active entry point, consult with pest control company. Seal any deficient areas immediately.

Observation: Cleaning is required in, but not limted to the following areas:
> Dishwashing area: food debris, rodent droppings and chewed material noted underneath the warewashing sinks, dishwasher and clean dish side table.
> Stand mixer: flour accumulation noted along the inside of the mixing bowl, rodent droppings noted on the base of the mixer.
> Dough prep table: food debris (spilled sugar and salt) noted inside the drawer that is closest to the stand mixer, one droppings noted inside this drawer.
> Cook line: food debris and grease accumulation underneath cooking equipment and coolers/tables, grease accumulation on vent hoods, rodent droppings noted underneath the clean plate shelving, food debris on the shelving under the steam table.
> Spare oven: rodent droppings noted in the storage compatment
> Hot water tank hallway: significant amount of rodent droppings noted in the corner behind the hot water tank.
> Dry storage room: rodent droppings on and under white shelving units on the right side upon entering, on and under the metal shelving unit on the left side upon entering.

CORRECTION ORDER ISSUED.
Corrective Action(s): Clean and sanitize above mentioned areas as per your sanitation plan IMMEDIATELY.
> Remove all droppings.
> Remove all food debris and grease accumulation.
> Equipment that are not stationary must be pulled out in order to adequately access and clean behind the equipment.
