Observation (CORRECTED DURING INSPECTION): Raw eggs were stored above ready-to-eat foods.
Corrective Action(s): Ensure raw foods are stored below and separately from ready-to-eat foods to prevent potential contamination of foods. Eggs were relocated to the bottom shelf at the time of inspection.

Comments

-Upright cooler was at 4C.
-Both customer area coolers were at 4C.
-Chest freezers (3) ranged from -18C to -24C.
-Hot holding was greater than 60C.
-Chicken was cooked to greater than 74C. Cooking temperature verified by staff using a probe thermometer.
-Cleaning and sanitizing carried out in the 3-compartment sink. Bleach was at 100ppm to 200ppm (minimum of 100ppm required for proper sanitizing).
-Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer pail was at 200ppm and properly labelled.
-General sanitation good at the time of inspection.
-Kitchen is serviced by a professional pest control operator. No signs of pests noted at the time of inspection.
-FOODSAFE Level 1 valid until June 18, 2023.
