Observation (CORRECTED DURING INSPECTION): One of the silicone spatula was worn out and had visible side cuts that could cause potential physical contamination of food. Staff discarded the spatula at the time of inspection.
Corrective Action(s): Ensure that all equipment/utensils/food contact surfaces are maintained in good working order.

Comments

Routine inspection conducted and the following observations were made during the inspection:

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Temperature of walk in cooler noted at 4C
- Stand up freezer at -15C
- Downstairs - 2x chest freezers at -18C and -25C.

Note - One of the white chest freezers is not being used for food storage but thick ice build up noted inside it. Please clean and sanitize the freezer prior to storing any food products in it.

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside cooler. Good.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station (2 compartment sink) was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer spray bottle available and the concentration of QUATS noted at 200ppm.
200ppm bleach solution was prepared in spray bottle during inspection and will be used as food grade sanitizer in future.
- High temp mechanical dishwasher reached 72.8C on dish surface during rinse cycle.
- Utensils and tongs were found in good sanitary condition.
- No grease build up observed on vent hood.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Staff has valid FoodSafe Level 1 certificate.
