Observation (CORRECTED DURING INSPECTION): Scooping bowl was stored inside a container of sauce.
Corrective Action(s): Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods. Scoop was removed at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Prep cooler was at 4C to 6C (cooler unit was on defrost cycle).
-Sweets cooler was at 4C.
-Under counter cooler was at 0C.
-Customer area chest freezers were at -16C and -18C.
-Back area chest freezers were at -17C/-18C.
-Kitchen chest freezer was at -18C.
-Sauces are cooled rapidly in sandwich bags in the chest freezer.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing).
-Bleach sanitizer pail was labelled and at 100ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Equipment was found to be clean and sanitary.
-Washroom clean and sanitary. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Operator FOODSAFE Level 1 valid until May 29, 2023.

-Facility has reopened for dine-in services.
-COVID-19 safety plan posted and seating capacity of 30 posted in the COVID-19 safety plan.
-Seating staggered to allow for physical separation of 2m between parties.

Facility is currently not collecting contact information for dine-in patrons. The Provincial Health Officer's Order dated July 31, 2020 requires the following:
25. If, in the ordinary course of business, you collect information from patrons for the purpose of making reservations or seating patrons,
a. you must collect the first and last name and telephone number, or email address, of at least one member of every party of patrons, and you may collect this information from other members of a party or from other patrons who wish to provide it; and
b. you must retain this information for thirty days, in case there is a need for contact tracing on the part of the medical health officer, in which case you must provide the information to the medical health officer
