Observation (CORRECTED DURING INSPECTION): Bleach sanitizer in spray bottles (X3) measured >>200 ppm chlorine concentration with test strip. Staff diluted bleach sanitizer in all spray bottles to a concentration of 200 ppm chlorine concentration measured with test strip.
Corrective Action(s): Prepare bleach sanitizer in labelled spray bottles at a concentration of 200 ppm chlorine by mixing 1/2 to 1 teaspoon of bleach with 1L of water. Ensure to obtain test strips to verify sanitizer strength (as per approved sanitation plan) is at 200 ppm to adequately sanitize all food contact surfaces throughout the day. Bleach sanitizer at a concentration >> 200 ppm can cause chemical contamination of surfaces and food.

Observation (CORRECTED DURING INSPECTION):
1. Hand washing station at back next to storage area is not supplied with paper towel. Staff placed paper towel in the dispenser during inspection.

2. Hand washing station at bar is not supplied with liquid soap. Staff placed a liquid soap dispenser at the hand sink during inspection.
Corrective Action(s): Maintain all hand washing stations adequately supplied with hot and cold running water, liquid soap and paper towel to ensure staff are washing their hands properly and at adequate frequency to prevent contamination of food.

Observation (CORRECTED DURING INSPECTION): Staff observed washing gloves after touching sanitizer bottle. Staff was asked to remove gloves and wash hands during inspection. Staff was reminded of proper glove etiquette.
Corrective Action(s): Gloves MUST NEVER be washed or reworn. Staff must remove their gloves between tasks and wash hands adequately before putting on a new pair of gloves. Glove use IS NOT a replacement for proper, frequent hand washing.

Observation: Over 30 drain/fruit flies observed on site in the following areas:
- Dishwashing area
- Food storage area directly on the left upon entry into the kitchen
- Food storage area in the back of the kitchen next to the cooking line
- In the staff washroom
Professional pest control company is contracted. Staff is not able to provide invoice which validates fly treatment has been conducted. Some sticky fly traps are observed in the kitchen in non-food preparation areas.
Corrective Action(s): Contact pest control company to assess and apply treatment to remove current fruit/drain fly population. Keep the premise in a sanitary manner to prevent fly entry/harbourage/breeding on site. Monitor fly problem and contact pest control company more frequently to prevent potential contamination of food. Operator to submit a copy of the pest reports for the next 2 months to the health inspector for review.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1. The following areas are observed with food debris/grease build up:
- Between preparation tables
- Floors behind and around all cooking equipment (fryers, stove tops etc.)
- Handles of all coolers

2. Ventilation canopy observed with heavy grease build-up. Staff stated that a company is scheduled to come within the next week for deep cleaning of the vents and all areas behind and around cooking equipment.
Corrective Action(s): Remove all major pieces of equipment from the kitchen to degrease, clean and sanitize all aforementioned areas to remove grease and food debris. Maintain the food premise in a sanitary manner by conducting regular cleaning of the entire premise including all floors, walls and surfaces.

Observations:
- Walk-in cooler at 3'C
- Sandwich coolers (X3) inserts and bottom compartments at or below 4'C
- Inserts in the cooler in front of the cooking line are observed in use. Inserts are able to maintain temperature of 4'C or lower. All inserts are observed covered with door. - good!
- No hot-holding observed on site
- Hand washing station upon entrance into kitchen is unobstructed and supplied with hot and cold running water, liquid soap and paper towel
- High-temperature dishwasher measured at 73'C at plate surface (above minimum required final rinse temperature of 71'C
- Equipment observed stored in a sanitary manner
- Ice machine observed in good sanitary condition
- No signs of recent rodent activity
- Professional pest control company is contracted
- FOODSAFE Level 1 equivalent trained staff available on site during inspection
- Permit posted in a conspicuous location on site
- Public washrooms observed in sanitary condition

Reminders:
- Temperature logs are NOT maintained on site. Ensure to obtain a temperature log template to check temperatures of all coolers and freezers (as per approved food safety plan). The operator should make a copy of the template to be used monthly.
- Remove all items off site which are not required for the purpose of this business to ensure the premise is maintained in a clutter-free, organized manner
