A routine inspection was completed, the following observations were made:
- Walk-in-cooler and display coolers 3C or colder; raw, whole chicken walk-in-cooler 1C; walk-in-freezer and display freezers -22C or colder; hot holding units 60C; thermometers present; and temperatures recorded twice a day.
- Hand sinks stocked with liquid soap, paper towels and running hot and cold water. Sinks accessible at all times.
- High temperature dishwasher had a rinse temperature of 71C at the plate's surface, as per max/min thermometer.
- Quats solution in spray bottles, cloth buckets, and at 3-comp manual warewashing sink had strength of 200ppm. Test strips present.
- General sanitation level is good. Exhaust canopy professionally cleaned this month, next one due in October 2022.
- Deli staff clean all equipment and surfaces. Safeway cleaning crew cleans the walls, floors and ceilings.
- No signs of pests. Monthly contract with a professional pest company in place for monitoring purposes.
- All foods stored in food grade containers; covered; date coded; labeled; foods stored 6" off the floor on shelves, racks, or pallets; and foods stored in groups.
- No expired foods in use or for sale. FIFO rules being followed.
- One staff member indicated they completed a course/training in food safety. Ensure there is always one person working at all times, who possesses a valid (or equivalent) BC FoodSafe Level 1 certificate. Contact our office if you are unsure if a food safety course/training is equivalent to the BC FoodSafe Level 1 course.
