203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Vat of rice in upright cooler outside kitchen had an internal temperature of 19.1C. The rice was prepared last night.
Corrective Action(s): The vat of rice was discarded at time of inspection. Ensure that all potentially hazardous foods, including rice, are cooled from 60C to 20C in 2 hours, and from 20C to 4C in 4 hours. Improperly cooled foods may lead to growth of bacteria which cause foodborne illness. Rice can be cooled more quickly by using portioning into wider and shallower containers and cooling smaller batches of rice at a time.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Two can openers and chef's knife contained grease and food debris.
Corrective Action(s): The can openers and chef's knife were cleaned and sanitized at time of inspection. Utensils need to be in sanitary condition after use to prevent contamination of food items.

Observation (CORRECTED DURING INSPECTION): Multiple infractions were noted in the glass upright cooler:
1. Wonton was stored next to minced beef.
2. Raw beef container was placed above produce.
Corrective Action(s): 1. The wonton was placed on the other side of the cooler where produce and cooked items are typically stored.
2. The raw beef container was moved to the lower shelf of the walk-in cooler where raw items are typically stored.

Ensure that all raw items are stored separately from or under cooked items / produce to prevent cross-contamination.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Ventilation slats above deep fryer and wok stove contain large amounts of grease.
Corrective Action(s): Remove the ventilation slats and run them through the dishwasher. Ensure that you monitor the ventilation slats and clean them as required to prevent grease accumulation.

Observation: Light cover has not been replaced yet (initial violation on RPT #ATYRAV).
Corrective Action(s): Operator states that the replacement light cover that was purchased was too large. Operator attempted to install the light cover at time of inspection, but could not do so. Please adjust / trim / purchase new light cover so that it will fit on the ceiling tile.

Routine inspection conducted. Overall sanitation is good - facility is generally well maintained and operated.

1) Temperatures (Max: 4C for coolers, -18C for freezers; Min: 60C for hot-holders)
- Walk-in cooler at 3C
- Beverage cooler behind front counter at 4C
- Prep cooler and cooling wells at 4C
- Chest freezer / stand-up freezer at -18C

2) Sanitation and Hygiene
- Sanitizing pail contained 200 ppm chlorine residual at time of inspection
- Handwash stations adequately stocked with hot/cold running water, liquid soap, and paper towels
- High temperature dishwasher measures 74C
- Ice machine in sanitary condition. Ensure that it is routinely checked for signs of mildew.

3) Storage
- Dry storage area is well organized - scoops are stored securely outside of dry storage goods (e.g. flour)
- Goods stored stored in pest-proof containers
- Take-out containers stored securely in cabinets and are clean / unused
- Cleaning agents (e.g. degreasers, potassium carbonate) are stored separately underneath food items

4) Administrative
- Operator has FoodSafe 1 Certification. All FoodSafe certificates issued before July 29, 2013 will expire on July 29, 2018. Therefore, ensure that you renew your FoodSafe certification before July 2018 - go to www.foodsafe.ca for more details
- Permit posted

5) Pest Control
- Professional pest control company (Orkin) manages pest control program and conducts monthly checks
- Mechanical pest trap opened and areas inspected for signs of rodents - no signs of recent pest activity at time of inspection - good

Recommendations:
- Reminder: Only a capful of bleach is required per bucket (1 tablespoon per gallon of water)
