Observation (CORRECTED DURING INSPECTION): Rice dumpling (with meat topping) stored at room temperature. The internal temperature measured at 35C. This is a repeat violation. The operator stated that he will be rapidly cooling the dumplings from 60-20C within 2hours and storing it at < or = 4C inside the cooler.
Corrective Action(s): Discard the food item. The operator must submit an updated food safety plan that includes storing at < or =4C in one week. Failure to comply with the refrigeration method of the dumplings will result in a violation ticket.
