Generally well maintained & operated. Sanitation is good. Refrigeration measures < 4 C. Freezer temperatures measure < -18 C. Hot-holding measures > 60 C. Spray sanitizer used in the kitchen and in the front area measures 300 ppm Q. Wiping cloth sanitizer used in the sushi bar measures 200 ppm Cl. Dishwasher final rinse temperature measures 74 C. Premises complies with the Transfat regulation. The ice-machine receives a regular CIP procedure.
