Observation: Walk in cooler fan and unit have accumulation of mould and dust. This unit requires cleaning. The dust/mould can contaminate the food contents.
Corrective Action(s): Clean unit to clear dust and mould build up as per scheduled cleaning. Correction required in 1 week.

Observation (CORRECTED DURING INSPECTION): Observed two old white knives in poor condition. The plastic handles were falling apart and pieces of plastic could be observed on surfaces.
Corrective Action(s): Discard and replace utensils in poor condition so plastic and contaminates do not enter food processing. Clean storage area as needed.

No signs of pests at the time of inspection.

Dedicated hand sinks with liquid soap and paper towels available.
Staff demonstrate good personal hygiene and sanitary hand washing.
Food protected from contamination. Food is from an approved source.
Food storage is well organized to prevent cross contamination.
2nd dry storage room in back is satisfactory. Only food storage in this unit.
Equipment in good working order.
Ice machine is sanitary with dedicated hand scoop.
Temperature holding is adequate and in use with accurate thermometers and logs.
2-compartment sink in use. Quat sanitizer in use at 200 ppm.
Dishwasher final rinse at 73.6 C at the plate. Technician was on site at time of inspection for maintenance.
Chemical test strips and logs available.
Orkin Pest Control program and measures in place.
Valid Permit posted in conspicuous location.
